Hey guys! Today I have another delicious and healthy recipe for you – gluten-free vegan eggs, a recipe for a healthy and colorful appetizer. A dish that will work well not only at Easter, when we want to replace the eggs on the traditional, festive table with something. We can prepare it for any occasion, such as parties and events, and of course, a healthy, everyday meal with your loved ones.
Especially great for kids. I found this recipe on a foreign website and quickly decided to translate it. I was surprised when, after testing the eggs for a party for an allergy sufferer, I found out that they disappeared from the table so quickly. Everyone even chose them over chicken eggs. They really are delicious and very much resemble the taste of real eggs. They’re even better than the typical veggie recipe I make with agar and rice.
Such eggs can be served as an appetizer, as an addition to breakfast or dinner with vegan mayonnaise, as an addition to salads and other delicacies from a cold plate. Such vegan agar eggs do not fall apart and look very natural thanks to the colored yolk. Unfortunately, you need to have good molds for them to make everything look aesthetic and effective. Recipe for vegan gluten-free eggs
INGREDIENTS:
- 200 ml of soy milk – no sugar, preferably with calcium
- flat teaspoon agar agar powder
- 50 g of soft tofu
- vegan mayonnaise
- turmeric, salt, pepper, black salt
- egg molds
PREPARATION:
Time required: 20 minutes.
Recipe for vegan gluten-free eggs
- Preparation of milk.Mix the measured milk and pour it into the pot. Add agar, mix with a large spoon and bring to the boil. Cook together for about 3 minutes, stirring gently and remove from heat.
- Mixing.Put the milk aside until it is slightly cool. Then season and mix. We fill with a mass of prepared, oblong molds resembling the shape of eggs, put balls in the middle, for example, rolled from foil, which will form a hole for the “yolk”.
- Fridge.Leave the eggs to cool and thicken. Can be put in the fridge. During this time, we prepare a mass of mixed tofu with mayonnaise, turmeric, black salt and spices.
- Ready.Then we take the solidified eggs carefully from the molds into the target dish. We fill the holes with our yolk. We will leave it in the refrigerator for a while. Ready!

Put the mass into oblong or round molds resembling the shape of half-cut eggs, you can buy them online or make them from plastic molds for e.g. kinder suprise or use various cookie cutters or even deep spoons, or shape aluminum foil. In the center of the mass we put balls, eg marble, toys or rolled foil, which will form a hole for the “yolk”.
