Zucchini soup, fit and tasty summer recipe

Hi, folks! Today I have a new fit recipe for you – a healthy soup with zucchini, potatoes and feta cheese. This is a really simple recipe to make and very tasty, it reminds me of my summer vacation in Greece. Especially now, when hot days have come and we do not want to stand over the pots or eat heavy, hot and fatty dishes.

Zucchini soup, feta- ble and dietary soup

Recipe for: summer fit soup with zucchini and feta cheese

INGREDIENTS:

  • a few young courgettes (or one large)
  • 80 ml of Greek yogurt
  • feta cheese packaging
  • 4 new potatoes
  • 1.5 liters of vegetable broth
  • olive oil
  • 1 tablespoon of butter
  • onion, a clove of garlic
  • salt, pepper, greek herbs
  • chopped fresh dill

EXECUTION:

Recipe for: summer fit soup with zucchini and feta cheese

  1. Let’s sip the onion.Finely chop the onion, e.g. into cubes, fry in oil and butter, over medium heat for about 5 minutes, stirring every now and then until golden brown.
  2. Potatoes.Then add the thinly peeled and diced potatoes. Stir and fry for a few minutes, stirring constantly.
  3. Mixing.Then add the grated garlic, pour in the previously dissolved broth and boil everything together.
  4. We season.We add a pinch of pepper and salt, Italian herbs or garlic, turmeric to taste.
  5. Cooking.When everything boils, keep on the fire for a few more minutes and add zucchini diced into large cubes. Cook for another 10 minutes. Then put it aside from the fire and season it if necessary.
  6. The end.We pour the soup on plates and cool it a bit. To each portion, add two tablespoons of yogurt and diced feta. We decorate with chopped dill. Finished!

Comments:

Finally, the soup can be blended into cream or served with pieces of vegetables.

We can serve the soup alone as a very light, dietary dish or with bread, potatoes and eggs as a delicious and filling dinner dish.
