Hey loved ones! Today I have for you another recipe for delicious Christmas dishes: keto sour soup without sourdough, on kefir and whey. This traditional dish cannot be missing from our Easter table!
This soup is easy to make and takes little time. For cooking, we can use ready-made broth from the fridge or bouillon cubes, as well as store-bought kefir and whey. Many people are afraid of homemade sour soup, because sometimes it may fail, but it is not worth being afraid of, it happened to me very rarely. You also don’t have to deny yourself traditional flavors just because they are traditionally cooked with a huge amount of carbohydrates. The keto version of sour rye soup is equally delicious and healthier.

Recipe for keto Easter sour soup
Ingredients (6 servings):
- a bottle of buttermilk
- a bottle of kefir
- a piece of bacon or other smoked meat
- a piece of smoked sausage and ham, e.g. from my brother-in-law
- a few dried porcini mushrooms
- homemade broth or cube – for about a liter of broth
- 2 eggs per serving
- 2 tablespoons sour cream or yogurt
- horseradish to taste
- possibly eggs, meats and sausage to be cut
- spices: salt, pepper, a few cloves of garlic, bay leaves, allspice, marjoram, etc.
Time needed: 3 hours.

- We prepare the broth
Boil some water in a pot, add kefir and buttermilk. Cook on a small fire until the cheese curds and then strain the decoction, on which we will cook our sour soup.
Add our broth or 1.5 liter water plus stock cubes to the pot. Add garlic, mushrooms, bacon, sausage, and smoked meats to taste. Mix everything together and cook over low heat until desired. The longer it is, the more acidic it is.
Meanwhile, hard-boil eggs, cool and peel. We choose 4 yolks to season the sour soup, put the rest of the eggs and the white on the plates.
Crush the yolks with a fork with sour cream, pour into the prepared sour soup and mix. Season with spices to your liking.
At my house, pure sour rye soup is served and separately horseradish, cold cuts, eggs, smoked meats, bread on plates, everyone cuts it and throws it on the plate according to taste. Ready!
