Keto cheesecake a’la rafaello, a quick no-bake cake : a simple how-to recipe
Ingredients for cheesecake mixture:
- 200 grams of coconut shavings
- 500 grams of mascarpone (one large package)
- 4 tablespoons of butter
- can of coconut milk
- sweetener or erythrol
- bottom: crushed almonds + half a cube of butter
- topping: half a chocolate (50 g) + 1/3 cubeof butter
Method of preparation:
- Put chips, butter, coconut milk and sweetener into a pot. Heat over low heat until all ingredients combine into a homogeneous mass.
- Cool the finished mixture and thoroughly mix it with mascarpone.
- We make the bottom, if necessary: we mix finely ground almonds with melted butter, whisk well on the bottom of the mold, put it in the refrigerator and chill until it solidifies a little.
- Then transfer the mixture to a silicone mold, put it in the refrigerator for about an hour.
- When the mixture has also set, we make a topping and pour it over the top of the cake. Decorate the top with shavings, coconut flakes or crushed almonds. Done!
