Hey, dear friends! Today I have another recipe for you for delicious sweets: keto cheesecake without bottom, which is a quick cake that is healthy, tasty and, although it is in the ketogenic version, it is not at all inferior in taste to the traditional heavy and fattening sweets. It’s perfect for holidays and parties, as well as for everyday coffee. I recently gave a recipe with pudding, but this one is even lower in carbohydrates. It is fluffy and soft, simply delicious, and always succeeds for me. Here is an easy recipe for keto cheesecake without a bottom:

Keto cheesecake without bottom: recipe, how to make

Ingredients for the cheesecake mixture:

  • 500 g of cottage cheese (preferably low fat)
  • 3 eggs
  • 200 ml of sour cream (minimum 30% fat)
  • 1/2 cup erythrol (or other keto sweetener)
  • 1 teaspoon vanilla extract
  • The zest rubbed from one lemon
  • A pinch of salt

Implementation:

Time required: 1 hour

  1. Preheat the oven to 180 degrees C.
  2. In the bowl of a mixer, place cream cheese, eggs, sour cream, erythrol, vanilla extract, lemon zest and a pinch of salt.
  3. Blend the ingredients to a smooth paste. Make sure all ingredients are well combined.
  4. Pour the mixture into a baking pan (preferably a pan lined with baking paper) about 20 cm in diameter.
  5. Bake the cheesecake in the preheated oven for about 40-50 minutes, or until the top is lightly browned and the center is set.
  6. Remove the cheesecake from the oven and let it cool before slicing.
