FIT wholemeal dumplings for borscht, for Christmas Eve|vegan

Hello, darlings! Today I have for you a recipe for FIT wholemeal dumplings for borscht, for Christmas Eve, with mushrooms or cabbage as a filling (or any other combination). In my diet, I have long missed this traditional dish, which are dumplings, croquettes and pancakes.

Fortunately, everything can be made more FIT with whole wheat flour. I wanted to try this recipe also because Christmas is coming and I will want to make delicious dumplings and Christmas Eve dumplings – with sauerkraut and mushrooms from the forest.

To make the recipe, we do not need any devices, only a table (e.g. silicone), a rolling pin and a glass. It’s quick to make and always comes out. The ears are delicious and taste so wholemeal to me. FIT wholemeal dumplings for borscht, for Christmas Eve | dietary and vegan

Ingredients:

  • 2 cups whole wheat flour
  • a glass of warm water
  • pinch of salt

    Stuffing:
  • 50 grams of champignons and/or dried mushrooms after soaking
  • and/or drained sauerkraut
  • and/or a small white onion
  • oil for frying
  • salt, pepper, spices: 4 balls of allspice, 2 bay leaves

Execution:

Time needed: 2 hours.

Recipe for FIT wholemeal dumplings for borscht, for Christmas Eve | dietary and vegan

  1. Cake first.
    Pour the ground flour into a mound on the table. Pour water, a pinch of salt inside, mix with your hand to combine the ingredients. Sprinkle with the same flour. Then we start kneading with our hands until everything comes together.

  2. Production.
    If the dough is too thick / thin, add water / flour. If it sticks, sprinkle again and knead. Form the dough into a ball, wrap it in foil and leave it in the fridge for a few minutes.

  3. Now stuffing.
    Chop the mushrooms as finely as possible and fry, while frying, season to taste. Finely chop the onion and add it too. Chop any cabbage finely and drain well, add to the mushrooms and fry everything until browned and taste good.

  4. We blend.
    After the stuffing has cooled, blend it into a fine mass or you can cut it into small pieces. If it’s too wet, drain and add more flour. We cool down, for example, with the window open.

  5. Back to the cake.
    When the stuffing is already cooled down, we take out the dough on the pastry board. We roll them out between two sheets of baking paper, flat on a cake. Then cut them into squares with sides of about 5 cm.

  6. We glue the edges.
    Put a small amount of stuffing.

    Glue the edges of the dough: fold the square with the stuffing in the middle into a triangle, fold the lower corners at the front, and fold the upper corners to the back.

  7. Cooking.
    We fold the shaped ears on the side of the table. When they are all ready, boil water in the largest pot, add a tablespoon of olive oil and salt.
    We put the ears in hot water for about 2 minutes, they are ready when they swell and float to the top. Ready!

Recipe for Uszka for Christmas Eve, my comments:

Uszka can be made with any filling: mushrooms, sauerkraut or sweet cabbage, or like Christmas Eve dumplings: with cabbage, mushrooms and onion. In my house we eat with forest mushrooms, they are delicious and you can’t buy them anywhere.

If the mushrooms let out water and the stuffing is too thin, drain them and add flour.

At my house, we eat ravioli on Christmas Eve, first with red borscht, and then fried like dumplings, as a separate dish. They are delicious!
