Today with us cold, grayish from the smog, the thermometer outside the window shows minus ten degrees. In the absence of sun and winter fatigue, it is difficult to think positively, that’s why I thought that I would do such quick, warm and crispy cookies for warming up and improving my mood. They are ideal for coffee as well as for unannounced guests, it takes a little time to do them – you can prepare them while cooking dinner. I always add such things to the oven, when I bake something in it and just shame my energy. By the way, the kitchen and living room will warm up, and the family will taste the tasty dessert with gusto. Will you tempt my healthy cookies?
1 and 1/2 cup of wholemeal or spelled flour
1/2 cup of unsweetened apple mousse
1/2 glass of coconut chips
1/4 cup of cranberry
1 teaspoon of baking powder
1/2 teaspoon of baking soda and salt
1 cup of coconut sugar, xylitol or stevia
1/4 cup of coconut oil
2 tablespoons ground linseed
orange peel or orange oil or 2 tablespoons of orange juice
First sift the flour, mix in a bowl with powder and baking soda. Now we can add wet ingredients – mousse, oil and orange juice. Stir thoroughly to the consistency of a dense, compact paste. We add dry ingredients: shavings, linseed, salt, orange peel. Now we knead the dough to blend in the ingredients. At the end, add the sliced cranberry and knead it all together again. From the dough prepared in this way, we tear small pieces, make balls and put on a baking tray lined with baking paper. We can also coat balls in chips or almonds. It is best to arrange them at equal intervals of approx. 3 cm, because they will grow up a bit. Bake cookies for about 10-15 minutes in a preheated oven at 190ºC.
The cookies come out crispy and delicious, they smell the whole house. Now, it’s just a question of how to hide them from the household … Let a few remain for later! 🙂
