Hey guys! Today I have another recipe for you for delicious and healthy desserts – vegan oatmeal cookies with cranberry and coconut.

Today we are cold, grayish with smog, the thermometer outside the window shows minus ten degrees. Due to the lack of sun and winter fatigue, it is difficult to think positively, so I thought that to warm up and improve my mood I would make myself such quick, warm and crispy cookies. They are perfect for coffee and for unannounced guests, and it takes little time to make them – they can be prepared while cooking dinner. I always put such things into the oven when I bake something in it and I simply feel sorry for the electricity. At the same time, the kitchen and living room will warm up, and the household members will enjoy a delicious dessert. Will you be tempted by my healthy cookies? Check out my recipe!

Vegan oatmeal cookies with cranberry and coconut

Ingredients:

  • 1 and 1/2 cups of wholemeal or spelled flour
  • 1/2 cup of unsweetened applesauce
  • 1/2 cup of coconut flakes
  • 1/4 cup of cranberries
  • 1 teaspoon of baking powder 
  • 1/2 teaspoon of baking soda and salt 
  • 1 cup coconut sugar, xylitol, or stevia
  • 1/4 cup coconut oil
  • 2 tablespoons of ground flaxseeds
  • orange peel or oil or 2 tablespoons of orange juice

Execution:

First, sift the flour, mix it in a bowl with the powder and baking soda. Now we can add the wet ingredients – mousse, oil and orange juice. Mix thoroughly until the consistency of a thick, compact paste. Add dry ingredients: shavings, linseed, salt, orange peel. Now we knead the dough until the ingredients merge. At the end, add the chopped cranberries and knead everything together again. Tear off small pieces from the dough prepared in this way, stick balls and put them on a baking sheet lined with baking paper. We can also coat the balls in chips or almonds. It is best to place them at equal intervals of about 3 cm, because they will get a little longer. Bake the cookies for about 10-15 minutes in an oven preheated to 190 ° C.
