Bread with grains | a simple, healthy recipe for homemade bread
- 500 g of whole wheat flour
- 300 ml of lukewarm water
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 7 g of dry yeast
- 1 cup of mixed grains (e.g. sunflower, pumpkin, linseed)
- Yeast activation:
- Mix sugar and dry yeast in lukewarm water. Leave for 5-10 minutes until the yeast begins to foam.
- Preparation of dough:
- In a large bowl, mix whole wheat flour and salt.
- Add the activated yeast to the flour and knead the dough for about 10 minutes. You can add water while kneading if the dough is too dry.
- Adding grains:
- Once the dough is smooth and elastic, add the grain mixture. Knead the dough for another 5 minutes to evenly distribute the grains.
- Proofing the dough:
- Leave the dough in the bowl, covered with a cloth, until it doubles in volume. This may take approximately 1-2 hours, depending on the ambient temperature.
- Forming the bread:
- Remove the dough from the bowl and gently shape it into a loaf shape. Place in a bread tin, previously greased with oil.
- Second rising:
- Leave the bread to rise again for about 30-45 minutes.
- Bake the bread in an oven preheated to 200°C for about 30-40 minutes until the bread turns golden brown and the sound of hitting the bottom becomes hollow.
- Cooling down:
- Once baked, remove from the oven and leave to cool on a rack.
