  1. Yeast activation:
    • Mix sugar and dry yeast in lukewarm water. Leave for 5-10 minutes until the yeast begins to foam.
  2. Preparation of dough:
    • In a large bowl, mix whole wheat flour and salt.
    • Add the activated yeast to the flour and knead the dough for about 10 minutes. You can add water while kneading if the dough is too dry.
  3. Adding grains:
    • Once the dough is smooth and elastic, add the grain mixture. Knead the dough for another 5 minutes to evenly distribute the grains.
  4. Proofing the dough:
    • Leave the dough in the bowl, covered with a cloth, until it doubles in volume. This may take approximately 1-2 hours, depending on the ambient temperature.
  5. Forming the bread:
    • Remove the dough from the bowl and gently shape it into a loaf shape. Place in a bread tin, previously greased with oil.
  6. Second rising:
    • Leave the bread to rise again for about 30-45 minutes.
  7. Baking:
    • Bake the bread in an oven preheated to 200°C for about 30-40 minutes until the bread turns golden brown and the sound of hitting the bottom becomes hollow.
  8. Cooling down:
    • Once baked, remove from the oven and leave to cool on a rack.
