Hi, folks! Today I have another recipe for you for delicious sweets: fit carrot cake with carrots and nuts. This is my favorite recipe, very healthy and extremely tasty.

She was never convinced of cakes made with vegetables, such as spinach or carrots, and I did not associate them with sweets. However, I found out how tasty and healthy at the same time – the presence of honey and vegetables. nuts make this recipe a really healthy and delicious dessert. Even children who don’t believe there’s any carrot inside will eat it!

Fit dough is very quick and easy to prepare and I always do. It is tasty, not too sweet, not too moist, and it always grows well. Just delicious! My whole family is constantly asking for a piece or a recipe. We can sprinkle them with powdered sugar or chopped nuts for decoration. Or pour over the white glaze or white cheese mass, which goes well with the taste of carrot cake. I’ve baked them several times and it always turned out delicious. I can’t imagine summer without this cake – it’s so easy to make. Will you be tempted by my healthy fit cake? I invite you to the recipe!

Ingredients:

  • 4 eggs
  • 4 carrots
  • 1 and a half cups of wheat flour mixed with wholemeal / bran
  • 1 cup of chopped walnuts
  • 1 cup of oil
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • half a teaspoon of salt
  • Spices: cinnamon, cloves, nutmeg, anise

  1. Preparation of ingredients.Chop or crush the walnuts with a rolling pin. We grate carefully washed carrots in a coarse grater. If we do not have ground spices, we grind nutmeg, cinnamon, star anise and cloves to dust. Of course, freshly ground is better!
  2. Mixing ingredients.Time for eggs. Separate the egg whites from the yolks, add salt and beat until stiff. We can make it stiff with sugar. One by one we add the yolks and I reduce the speed of the mixer. Then slowly pour in the oil.
  3. Mixing.In a separate bowl, mix the flour with baking powder and baking soda. We add it to the eggs, then add the spices. There should be a dense mass. At the very end, pour the carrots and nuts. We mix all the time at low speed. We put the oven on.
  4. Mold.When everything is well mixed pour the dough into a baking tin lined with baking paper / greased with butter and crushed nuts.
  5. Baking.Put the dough in the oven for about 50 minutes and bake it at 180 ° C. We check with a stuck match whether it is dry and whether it is baked. Cool it with the oven door ajar. We decorate it when it is ready.

Whether the dough is ready, you can easily check with a match or a stick – stick it into the dough and check if it is dry. If so, then the cake is ready. I cool the cake with the oven door ajar so that it does not fall.
