Ingredients:

  • 1 cup quinoa
  • 2 chicken fillets, diced
  • 1 red bell bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • 1 handful of fresh parsley, chopped
  • 2 tbsp. lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa under running water to remove bitterness.
  2. Cook the quinoa according to the instructions on the package. When ready, set it aside to cool.
