Hello! Today I will share with you another delicious recipe: Keto vegetable salad a’la potato, a classic of Polish traditional dishes, which accompanies us most often during all family gatherings. This time in a fatty vegetarian and keto version!

Perfect for the festive table, not only for Christmas Eve and Christmas, Easter, a simple dinner and also every party. The salad has the taste of vegetable mayonnaise, but without carrots and potatoes. It is delicious, and very healthy and filling.

Keto vegetable salad a’la potato – a quick recipe


Ingredients:

  • 400 g (half) cauliflower with stem
  • 6 eggs
  • 3 medium-sized pickled cucumbers
  • 1 small salad apple
  • possibly colored peppers, celery, olives, etc
  • 2-3 heaping tablespoons of mayonnaise
    • Sauce:
    • 1 tablespoon of cream min 30%
    • spoon of oil
    • 2 flat teaspoons of table mustard
    • chives
    • a pinch of salt and pepper, spices

Salad preparation

Time needed: 20 minutes.

Keto vegetable salad a’la potato – a quick recipe

  1. Eggs.
    Hard boil medium-sized eggs, cool and peel.

  2. Cauliflower.

    We clean, we shred a bit. Cover with boiling water and cook for about 20 minutes in salted water until tender. At the end of their cooking, we stick a fork to check if it is already soft and cooked. We leave it to dry.

  3. Slicing.

    Cut the apple, eggs and pickled cucumbers into cubes. Also extra vegetables like peppers. Cut the cauliflower into a slightly larger size. The stem is edible and will look more like potatoes than florets.

  4. Time for the sauce.

    Pour the chopped ingredients into a bowl. Separately, mix the sauce ingredients in a glass and pour it over the vegetables. Mix everything well and season to taste. It needs to be chewed for a while before serving.

Before serving, the keto salad needs to bite for a while. It can also be made the day before. It tastes great with cold cuts, fried eggs and keto bread.

Store-bought mayonnaise contains refined vegetable oil, which is very unhealthy, especially for people on a keto diet. It’s your choice whether you choose to eat it from time to time for flavor or make this homemade and healthier one.
