Hey loved ones! Today I have another recipe for you for delicious keto dishes, not only festive: creamy mushroom soup made of dried mushrooms. After all, our table cannot miss this traditional dish!

Making this mushroom soup is simple and takes little time. For cooking, we can use dried mushrooms, boletus and / or boletes from the store, and even champignons, but it’s best to use those you pick yourself during autumn walks in the forest. Then autumn has its own special atmosphere, and the soup has a taste that no one can resist. Nothing compares to the taste of properly prepared one.

Ingredients:

  • about 300 g of selected mushrooms (fresh, frozen, dried)
  • approx. liter of broth (vegetable, mushroom or meat broth, finally diced)
  • 1 medium onion
  • half a packet of 30% cream (/ canned coconut milk)
  • 3 tablespoons of butter 82%
  • spoon of olive oil
  • parsley
  • 2 cloves of garlic (or seasoning)
  • 1 teaspoon of thyme and marjoram
  • salt, pepper, spices to taste

Execution:

Time needed: 30 minutes.

  1. Preparation of mushrooms.
    Rinse the dried mushrooms thoroughly under running water, pour warm broth in a pot and leave to soak, preferably overnight.

    Wash, wipe and cut fresh mushrooms, while frozen mushrooms need to be thawed first.

  2. Frying.
    Meanwhile, fry the finely chopped onion with chopped garlic in olive oil, add butter and spices in turn, fry for about 2 minutes, then add chopped mushrooms. Stirring every now and then, fry it and simmer it for 5-7 minutes. Seasoning.

  3. Cooking.
    Pour hot broth into the pot. Bring to a boil over high heat, season with salt and pepper. After boiling, reduce the heat and, while stirring, cook, covered, until soft / about 20 minutes.

  4. Seasoning.
    Season the soup with cream and cook for 2-3 minutes, then put it aside from the heat and mix it with parsley.

  • We can prepare such ready-made soup up to two days in advance, it will taste better in the refrigerator and will be even better. You can also preserve it and keep it in the refrigerator for a few days.
  • Let us serve the soup clean, with pieces of boiled mushrooms.
  • For the rest of the non-keto family, rice can be cooked separately, and cream can be used to season the soup on the plates. You don’t have to cook dinners separately, and it’s delicious.
