Hello! Today I will share with you another delicious recipe : Keto herring salad, which is something for lovers of vegetable salads and traditional cuisine – but in a fatty and keto version! Perfect for the festive table, not only for Christmas Eve and Christmas, Easter, a regular dinner, as well as any home party. It is delicious, and very healthy and filling.
It can also be made in a vegetarian version, e.g. cauliflower as potatoes or a vegetable substitute for fish. It’s quick and easy to make, and despite the fact that it’s not very revealing (the recipe is inspired by a traditional one), it may inspire someone to prepare a healthy meal. Keto herring salad | not only on Christmas Eve and Christmas
- 6 herring fillets (not in oil)
- 6 pieces – hard-boiled eggs
- 6 pieces pickled cucumbers
- small apple
- small onion (e.g. red)
- or half a yellow/red pepper (as corn)
- optionally diced yellow / white cheese (as potatoes)
- 2 tablespoons of cream 30%
- salt, pepper, herbs
- 2-4 teaspoons of extra virgin olive oil
- A teaspoon of lemon juice
- 2 tbsp mayonnaise (I recommend homemade)
Time needed: 3 hours and 20 minutes.
Keto herring vegetable salad
- Filets first.
Rinse the herring fillets taken out of the salty brine well under running water. Put it in a bowl with water (possibly spices) and leave it for a few hours / overnight in the fridge.
Hard boil medium-sized eggs, cool and peel. Then, dry the fillets with a paper towel and cut into small strips.
We prepare a fairly tall bowl. Throw in the chopped herring and eggs cut into large pieces. Add the diced, peeled apple and the same fine cucumbers and chopped onion (and possibly cheese)
- Time for the sauce.
Mix the given ingredients in a separate bowl, season to taste and pour over the salad. It must be chewed at least 10 minutes before serving. Ready!
Keto herring salad, notes:
Store-bought mayonnaise contains refined vegetable oil, which is very unhealthy, especially for people on a keto diet. It’s your choice whether you choose to eat it from time to time for flavor or make this homemade and healthier one.

I also recommend adding peppers, cauliflower, cheeses and other ingredients that pretend to be traditional additions to the salad. If you use cauliflower, it must be cooked before slicing.
