Homemade sourdough rye bread | the simplest and quickest recipe

Hello, dear friends! Today I have for you a recipe for healthy sourdough rye bread. This is a really easy to make baked product that is sure to taste good to everyone. Especially when it’s warm, smells all over the house and so crunchy!

Recipe for homemade sourdough rye bread

Here is a recipe for homemade sourdough rye bread:


  • 300 g rye sourdough starter
  • 400 g rye flour
  • 200 g wholemeal wheat flour
  • 1 teaspoon salt
  • 1 teaspoon of honey or agave syrup
  • 300 ml of warm water

  1. In a large bowl, mix the rye sourdough starter with warm water.
  2. Add rye and wholemeal wheat flours and salt. You can also add honey or agave syrup for more flavor.
  3. Mix the ingredients until a dough forms. Remember that the dough will be thick and sticky.
  4. Cover the dish with a cloth and let it rise for about 8-12 hours in a warm place. The dough should double in volume.
  5. After the dough has risen, turn it out gently on a lightly floured surface and knead it gently for a few minutes.
  6. Form the bread and place it in a greased baking pan or bread pan. You can use extra flour for shaping.
  7. Let the bread rise again for about 1-2 hours.
  8. Before baking, preheat the oven to 220°C.
  9. Gently stretch the top of the bread with a knife and place it in the oven.
  10. Bake the bread for about 40-50 minutes, until it is beautifully browned and makes a deafening sound when tapped on the bottom.
  11. After baking, remove the rye bread from the oven and let it cool on the griddle.

You can store the finished rye bread in a cool place in an airtight container.
