Ingredients for keto carnivore collagen broth:
- 1-2 kg of meat on the bone and with skin (e.g. chicken leg, duck legs, pork ribs, pork knuckle, chicken feet)
- 2 tablespoons of apple cider vinegar
- 1 onion, cut in half
- 2 cloves of garlic, crushed
- 1 teaspoon salt (or more, depending on taste)
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- Water to cover the ingredients
Preparation:
- Preparing the meat with skin: Place the meat with skin in a large pot. If you are using chicken, make sure the skin is well plucked and washed.
- Add apple cider vinegar: Add 2 tablespoons of apple cider vinegar to the pot. The apple cider vinegar will help extract nutrients from the meat and skin.
- Add vegetables and spices: Add chopped onions, crushed garlic cloves, dried thyme, bay leaf, salt and pepper.
- Fill with water: Pour water over the ingredients so that they are thoroughly covered.
- Cook: Bring the broth to a boil, then reduce the heat to low, cover the pot and simmer for a long time. You can cook it for up to 12-24 hours to get the maximum amount of flavor and nutrients.
- Remove the foam: During cooking, foam will appear on the surface of the broth. Skim it off with a spoon to get a clear broth. If necessary, add a bouillon cube for flavor.
- Strain the broth: Once the broth is cooked, strain it through a sieve or thick strainer to separate the meat, skin, vegetables from the liquid.
- Refrigerate and store: Set the broth aside to cool, then store it in the refrigerator. The broth may gell in refrigeration, which is a natural effect of the presence of gelatin.
