Hey! Today I have another recipe for you for a delicious and healthy dish – vegan gingerbread, great not only for the festive table or as an ornament to hang on the Christmas tree. It is a reliable recipe that I have tried many times. They are crunchy, fragrant and delicious, because they are not sweet, but they are spicy, perfect for hot chocolate or mulled wine.
They are made easily and in a really short time, so it is a good recipe even for novice cooks. In addition, we can easily modify this recipe – make them sugar-free, less sweet, made of gluten-free flour or more dietary. We can also decorate them with toppings or sprinkles, then they look very effective. The gingerbread cookies always come out, rise beautifully, are moist, crunchy and delicious. My family eats them right out of the oven. I recommend my vegan gingerbread cookies, they disappear from the plate in the blink of an eye!
Vegan gingerbread for Christmas – recipe, how to make
- 1/2 kg of flour (plain, gluten-free or wholemeal)
- 100 g of butter / margarine
- half a cup of plant-based milk
- about 200 g of barley malt
- 6 tablespoons of sugar / substitute
- a tablespoon of gingerbread spices
- a tablespoon of cinnamon (or a mixture with vanilla, cardamom, etc.)
- spoon of dark cocoa
- or on top: topping / sprinkles / cinnamon sugar
We measure out all the ingredients. Put the butter, malt and sugar into a small pot and melt it over low heat. We stir while cooking.
We mix the ingredients
After dissolving, add spices and mix, cool a little so that it remains in a liquid state. We shift the flour into a bowl, throw in the rest of the ingredients and mix until well combined.
We set aside.
We leave the dough in the fridge for at least an hour – it can also be overnight or longer.
Then turn on the oven to 180 ° C. Take the dough onto the pastry board, roll it quite thinly, sprinkling it with flour all the time. Finally, cut the gingerbreads into any shape and bake it for exactly 7 minutes. Longer time will cause them to brown.
We decorate gingerbread and decorate as you wish. We put it away in a dark place until Christmas, covered with a cotton cloth, e.g. in a metal cookie tin.
Vegan gingerbreads – notes:
Instead of cocoa, you can add instant coffee or carob, and instead of sugar – honey or any syrup or sweetener.
The best ones are a bit firm, if you make them some time before Christmas and hide them to give them their flavor and harden. But beware – they smell beautifully for Christmas and you should always make more of them, because the household members eat while still warm, straight from the tin!
