Keto ravioli with mushrooms for Christmas Eve (gluten free, paleo, lchf)

Hello! Today I have for you a recipe for Keto dumplings ravioli for Christmas Eve made of almond flour, with mushrooms or cabbage as a filling. In the keto diet, I have long missed this traditional dish, which are dumplings, ravioli, croquettes and pancakes.

Fortunately, anything can be made with a gluten-free, high-fat ketogenic flour. How to make keto mushroom dumplings? This time I used the recipe for a cake with the addition of almond flour. Dumplings made of linseed flour were hard to stick and I was afraid that such small ears would not stick to each other during cooking. However, they turned out great! Recipe for keto ravioli with mushrooms for Christmas Eve – how to make? (gluten free, paleo, lchf)

Ingredients:

  • 100 g of dried forest mushrooms / champignons (soak overnight)
  • approx. 200 g of almond flour
  • 3 medium eggs and 1 egg white
  • 50 g keto flour (seed, almond, etc.)
  • and/or drained sauerkraut
  • white onion
  • 2 tablespoons of butter
  • salt, pepper, spices

Execution:

Time needed: 2 hours.

Recipe for keto ravioli with mushrooms for Christmas Eve

  1. Cake first.
    Pour the ground flour into a mound on the table. Crack 2 eggs and egg white into the center, mix with your hand. Sprinkle with the same flour. Then we start kneading with our hands until everything comes together.

  2. Now stuffing.
    Drain the mushrooms soaked overnight, chop as finely as possible and fry in butter, while frying, season to taste. Finely chop the onion and add it too. Chop any cabbage finely and drain well, add to the mushrooms and fry everything until browned and taste good.

  3. We blend.
    After the stuffing has cooled down, blend it into a fine mass with the egg, flour for thickening and spices. If it’s too wet, drain and add more flour.

  4. Back to the cake. We take out the dough on a sprinkled table. Roll them out between two sheets of baking paper or foil, flat on a cake. Then we cut out small squares. We glue the edges of the ears as always. If the dough is not sticky enough, add less stuffing.

  5. Cooking.
    We fold the shaped ears on the side of the table. When they are all ready, boil water in the largest pot, add a tablespoon of olive oil and salt.
    Put them in hot water for about 4 minutes, they are ready when they swell and float to the top. Brush them with melted butter and/or fry them.

Keto ravioli, my comments:

Keto dumplings can be made with any filling: mushrooms, sauerkraut or like Christmas Eve: with cabbage, mushrooms and onions. In my house, we eat dumplings with borscht, and the next day they are fried on their own from the pan. Pride!

Keto dumplings and dumplings can be frozen, I tested that after defrosting and frying they are as good as fresh. They can be kept fresh for 2-3 days in the fridge and reheated in a pan.
