Fit rice flour pancakes “raspberry cheesecake” no gluten

Hello guys! Today I have another delicious and healthy recipe for you – sweet fit rice pancakes; great idea for dessert, sweet dinner and of course breakfast.

Warm and browned, fragrant cheesecake pancakes with raspberries will surely appeal to everyone, and they are more healthy than the traditional, heavy ones we remember from home cooking. Fit pancakes are light and delicate and almost do not contain fat, they are on a gluten-free dough, but they provide us with a lot of fiber, protein and vitamins, so necessary for us in this hard time. They are warm, soft and delicious! And at the same time so simple and quick to prepare. They can be served with any sweet additions, thanks to which we will achieve a different taste each time, and the pancakes will never go to waste. A recipe for fit sweet rice pancakes

Ingredients for the dough:

  • 1 cup of rice flour
  • 3 eggs
  • a glass of plant milk
  • 2 tablespoons of sweetener, e.g. erythritol
  • a little sugar / vanilla flavor
  • coconut oil for frying

Fit pancakes: ingredients for the filling

  • 20 grams of cottage cheese
  • a few tablespoons of raspberries (preferably fresh, frozen)
  • half a cup of large plain yogurt
  • 2 tablespoons of honey
  • almonds / whipped cream without sugar / nuts, fruit for sprinkling

Execution:

Time needed: 20 minutes.

  1. Sifting flour.

    We sift the flour through a sieve into a large bowl. At this stage, you can make flour – grind the rice with a good blender / grinder to a powder.

  2. Mixing ingredients

    Put the flour into a bowl, add eggs, sweeten, flavor and milk. Blend to a smooth paste without lumps. It should be quite runny.

  3. Frying pancakes
    The dough does not have to stand out before frying because it is gluten-free. Preheat the pan well, pour in the coconut oil. Stir the dough. Pour out a portion of the dough and fry for about a minute on each side until crisp.

  4. Ready cake!
    The pancakes prepared in this way must cool down for a few seconds, and then we translate them with the filling.

  5. Filling.

    Crush the cottage cheese with a fork with yoghurt, aroma and honey or blend it immediately in a glass until smooth. Crush the raspberries with a fork. Put a little cheese on each pancake and decorate the center of each pancake with a raspberry circle.

  6. Icing.

    We wrap fit pancakes in any shape, sprinkle with pieces of fruit and almonds, pour honey or decorate with cream and peanuts. Pride!

Rice, oatmeal, chickpea or pea flour – how to make it at home?

Rice grains are poured into a good-quality blender or electric coffee grinder. We grind at high speed for a while, tap and grind at low speed until a white powder is obtained. This flour should then be sifted in a sieve. With such cheaply prepared flour, you can easily fry pancakes and even make pastries.
