Hello, darlings! Today I have for you the simplest possible recipe for keto pancakes with cottage cheese. This is a really quick and uncomplicated recipe for a delicious breakfast or dessert that everyone on the ketogenic diet will surely enjoy.

How to make keto pancakes? When I was a child, I often ate pancakes with cheese, vanilla sugar and egg yolk. The fresh ones were rolled into rolls, and those fried in a pan were folded into three parts. They were delicious! I still eat warm and ruddy, fragrant pancakes to this day, but in the keto version. They are definitely their healthy and keto alternative.

They do not cause problems during frying, and their preparation time is only a few minutes. Great alone or sprinkled with stevia and with all keto additives: fruit, cream, peanut and chocolate butter or even savory. This is my recent favorite breakfast. How to make keto pancakes?

Ingredients (3 servings):

  • 3 eggs
  • 3 tablespoons of thick, ground cottage cheese (Bieluch, cheesecake)
  • 3 tbsp flax flour (or coconut, almond)
  • minced cheese or curd cubes and a spoonful of sour cream
  • vanilla oil
  • erythritol
  • coconut oil for frying


Time needed: 5 minutes.

  1. Preparation
    The eggs should be at room temperature. We put them in a bowl, add cheese, a little sweeter. Blend or blend to a smooth paste without lumps. It should be quite runny.

  2. Frying pancakes

    Heat the pan, pour oil. Pour a portion of the batter and fry for about 2 minutes on each side until crisp. The pancakes prepared in this way must cool down for a few seconds, and then we layer them with the selected toppings.

  3. Filling.

    In a bowl, mix the cottage cheese, cream, erythritol and vanilla oil until smooth. Grease the pancake, roll it into 3 rolls and eat/or fry it in a pan until golden. Sprinkle with erythritol.

Recipe for ketogenic pancakes – notes:

It is best to serve them right after frying when they are warm and crispy. With sweet additions on top, depending on your taste: cream, erythritol or cinnamon, melted chocolate.

We can make a filling of cottage cheese, cottage cheese, skyr, yogurt or even cream. My favorite filling is mascapone, cream cheese and sweet cream with vanilla oil.
