Apple cider vinegar with honey is a tasty addition to dishes and drinks, and its preparation is quite simple. When apples are in season, it’s worth thinking about making homemade, old-fashioned apple cider vinegar, especially since we can use peels and stubs – the waste when making apple mousse – for this. My Grandmother always used such no waste. Vinegar has many micro and macro elements and minerals, and is ideal for drinking when fasting on a keto diet. Here is a simple recipe for apple cider vinegar on honey:

Ingredients:

  • 4-5 large apples (preferably organic)
  • 2 tablespoons of honey (preferably raw and unfiltered)
  • 4 cups of water
  • Additional apple slices (optional)
  • 1 tablespoon of honey (optional, for sweetening)

Instructions:

  1. Prepare the apples: Wash the apples, then cut them into pieces along with the seeds, peel and flesh. Do not peel the skins or remove the seeds, as they contain natural yeast that can help the fermentation process.
  2. Prepare the honey concoction: In a bowl, mix 2 tablespoons of honey with 1 cup of warm water. Mix thoroughly until the honey dissolves.
  3. Put the apples in a jar: Place sliced apples in a jar with a capacity of at least 1 liter. Add honey dissolved in water.
  4. Add water: Add the remaining 3 cups of water to the jar. Make sure the fruit is completely submerged in the liquid.
  5. Close the jar: Close the jar tightly, but not too tightly, as gas may form during the fermentation process.
  6. Fermentation: Leave the jar at room temperature for about 2-4 weeks. Wait for the apples to start fermenting. You can tell by bubbles on the surface and a slight sour smell.
  7. Filtration (optional): Once fermentation is complete, you can strain the vinegar, removing pieces of apples. You can also leave a piece of apple at the bottom of the jar to add to the new batch and speed up the next fermentation process.
  8. Sweetening (optional): If you wish, you can add an extra tablespoon of honey to the vinegar to sweeten it slightly. Stir it until it dissolves.
  9. Storage: Store your apple cider vinegar with honey in the refrigerator. The longer you store it, the more the flavor and aroma will develop.

Notes:

Such vinegar has about 5% concentration of acetic acid.
