Vegan salad with baby spinach, beans, and tofu

Hey guys! Today I am going to share with you a recipe for my favorite dinner vegan salad. 

It is delicious and easy to make, although it is not very revealing, it may inspire someone to prepare a healthy meal. Such a colorful salad is a great idea for a healthy and filling breakfast, a meal before training, lunch to work as well as a quick-to-prepare dish for every day. It is low in calories and very nutritious, and vegan, although of course you can enrich it with egg, avocado or cheese to make it even more valuable. So if you like such a green plate, check out my recipe.

Vegan salad with baby spinach, red beans, cherry tomatoes, and tofu

Ingredients

  • half a cube of tofu per person
  • half a red pepper
  • a large carrot
  • half a packet of spinach -baby leaves
  • half a can of red beans or cooked
  • a few leaves of Chinese cabbage
  • cherry tomatoes or a whole large tomato 
  • olive oil
  • garlic -clove, as someone likes 
  • seasoning for salads
  • salt and pepper to taste

Preparation of the salad

First, wash all the vegetables thoroughly and leave the water to drain. We prepare a sauce of spices, tablespoons of oil and water. We peel the carrot. Put the beans and diced tofu with paprika into a bowl. Cut the carrots into long ribbons with a vegetable peeler. add the tomatoes and finally crush the spinach leaves with your fingers. remember not to cut them with a knife, but just tear them into smaller pieces. pour the sauce over the salad and mix and season to taste.

Finished! The salad can now be served to the table.

It can be a great, healthy dinner or lunch. However, it is best to eat it with a slice of whole wheat bread. Thanks to this, it will be a wholesome meal by itself, rich in vegetables, protein and carbohydrates.
