Scrambled eggs with tomatoes and spinach

Hi guys! Can scrambled eggs be healthy? Of course! But not traditional, prepared in butter, with bacon, sausage and onions or other such “delicacies”!


Such a heavy meal for breakfast will make us a bit sleepy and dull, possibly exhausted and probably less productive for the rest of the day. On the other hand, scrambled eggs with coconut or rapeseed oil, with a small amount of healthy fat and the addition of fresh vegetables, are a great warming meal, full of essential protein, vitamins and fiber. Such colorful scrambled eggs are a great idea for a healthy, warm and filling breakfast, a meal before training, lunch to work, as well as a quick-to-prepare dish for every hard winter day.

Scrambled eggs for breakfast

Ingredients

  • 2 eggs per person
  • half a red pepper
  • a handful of spinach -baby leaves 
  • bulb 
  • cherry tomatoes or a whole large tomato 
  • oil or coconut butter 
  • garlic -clove, as someone likes 
  • salt and pepper to taste

Preparation of scrambled eggs

First, we put the eggs in a bowl. Dice the pepper, tomato and spring onions. Then warm the oil in a pan, fry the garlic and spices for a few seconds and add the onion. Then we fry the vegetables for a short time, just enough to soften them and take on the aroma of spices. Then add the beaten eggs and fry everything together for a few minutes. Season with salt and pepper. Simple isn’t it?
